Pretzel Rolls Recipe

Making bread is one of my favorite things to bake in the kitchen. There is just something about making that big blob of dough and watching it transform into something that you just can’t stop eating. Slather these pretzel rolls with some butter when they come out of the oven for a real treat.

Do you cringe when you go to buy a package of yeast? I know I used to. It seems like so much to pay for 3 little packages of yeast. Did you know that yeast can be frozen? I now buy the big packages of yeast for about $5.50 at Sam’s or Costco and freeze it. King Arthur sells a measuring spoon here that I bought years ago and wouldn’t be without.

When you make these rolls, if you want a little crisper crust, leave the roll in the water bath for about 1 minute instead of the 30 seconds. These rolls have all of the flavor of the pretzels you can buy at the mall.

Cook Time: PT10-12M

Total Time: 2 hours, 30 minutes

Yield: 16 Rolls

Pretzel Rolls are yeast rolls that are dipped in a baking soda bath for 30 seconds before baking, sprinkle with coarse salt before baking.

Ingredients

  • 4 - 4 1/2 cups flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 package yeast
  • 4 tablespoons butter
  • 1 1/2 cups warm water
  • 3/4 cup baking soda
  • large pan of water
  • 1 egg - beaten with 1 tablespoon water
  • coarse salt

Instructions

  1. Combine the warm water, sugar and yeast in a mixing bowl. Let sit until the mixture begins to bubble.
  2. Add the 4 cups flour, salt and butter. Use you dough hook and begin to combine all of the ingredients. Increase the speed to medium and continue to knead until the mixture pulls away from the sides of the mixing bowl. Add the remaining 1/2 cup flour as needed. Knead the dough for about 4 - 5 minutes. Cover the bowl and let raise until doubled.
  3. Divide the dough into 16 equal pieces. Roll the dough into a 9 inch rope. Tie into a know. Place on a floured surface to let raise until doubled.
  4. Ring a large pan of water to a boil with the baking soda in it. Add the rolls one at a time and cook for about 30 seconds. Remove to a wire rack to drain. Place on a greased cookie sheet.
  5. Brush with the egg wash. Sprinkle with the coarse salt.
  6. Bake at 350 degrees for 10 - 12 minutes. Remove to a wire rack to cool
