Grilled Angel Food Cake with Fruit Salsa
FOR THE FRUIT SALSA:
1/2 cup chopped cantaloupe
1/2 cup chopped strawberries
1/2 cup blueberries
1 kiwi fruit, peeled and chopped
2 tablespoons sugar
1 tablespoon fresh lime juice
FOR THE CAKE:
1 (14 oz) angel food cake loaf
In medium bowl, combine all fruit salsa ingredients; mix well. Slice cake in half horizontally.
Place cake halves, cut side down, on gas grill over medium heat or charcoal grill 4 to 6 inches from medium coals. Cook 30 to 60 seconds or until light golden brown.
Cut cake into 8 pieces; place on individual dessert plates. Top each with fruit salsa.
*TO BROIL CAKE:
Place cake halves, cut side up, on broiler pan; broil 4 to 6 inches from heat for 1 to 2 minutes.
