Hot Pot Casserole
2 lbs. round steak, cubed
1 t. salt
1/4 t. black pepper
3/4 lbs. carrots, thickly sliced
2 onions, thickly sliced
1 1/2 lbs. potatoes, thickly sliced
2 1/2 C. beef stock
Preheat oven to 325°F.
Arrange a layer of beef cubes in an oven casserole dish. Sprinkle over a little salt and pepper, top with a layer of carrots, onions and potatoes.
Continue making layers until all of the ingredients are used, ending with a layer of potatoes, arranged in overlapping slices. Pour in the stock.
Cover and bake for 2 to 2 1/2 hours, or until meat is tender. Increase the oven temperature to 400°F. and cook for another 30 minutes or until top layer of potatoes are brown.
