Pea Sausages

Pea Sausages

Leftover black-eyed peas (2 C. or so)

1 egg, beaten

1/2 C. chopped onion

2 T. flour

salt and pepper to taste

sage and poultry seasoning to taste

pinch of red pepper

Mash the leftover peas up real good. Stir in rest of ingredients, using enough flour to hold batter together. Make patties and fry in oil until brown.
