Squash Au Gratin
1/3 cup dry fine bread crumbs
1/4 cup finely chopped parsley
1/2 teaspoon garlic salt
1/4 teaspoon oregano
1/4 teaspoon thyme
1/4 teaspoon pepper
4 cup cubed, peeled acorn squash (1lb)
2 cup cubed butternut squash (1/2 lb)
2 cup chopped peeled parsnip
1 tablespoon olive oil
1/2 cup shredded sharp cheddar cheese
Mix first 6 ingredients in large bowl.
Add squashes, oil and parsnip. Mix to coat with oil.
Spoon into casserole dish coated with cooking spray.
Cover and bake 325° F. for 1-1/4 hours.
Sprinkle with cheese; bake 20 minutes more.
