Zucchini Frittata

5 eggs beaten

5 cup grated zucchini

1 onion chopped

1 cup parmesan cheese

1/4 cup oil

1-1/2 cup Bisquick

1 tablespoon parsley

1 teaspoon salt

1/4 teaspoon pepper

1 cup grated cheddar cheese

Mix together all ingredients except cheese.

Bake in oiled 9″ square pan 350° F. until toothpick comes out clean when tested.

Sprinkle cheese on top & bake just until melted.

Let set for 15 minutes.

Good cut in squares for hors d’ oeuvers or side dish.
