Dried Cherry, Pistachio, White Chocolate Biscotti
1 stick unsalted butter — softened
3/4 cup sugar
1 Tablespoon grated orange peel
1/2 teaspoon vanilla
2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup white chocolate — coarsely chopped
1/2 cup dried cherries
1 1/4 cups unsalted pistachios
Preheat oven to 325. line baking sheet with parchment paper.
Combine butter, sugar, zest and vanilla with electric mixer, beating well. Add eggs, one at a time, beating well.
Combine dry ingredients and gradually add to butter mixture. Stir in chocolate, cherries and pistachios.
Form dough into 2 logs, 12×3″. Arrange 3″ apart on baking sheet. Bake in middle of oven until golden, about 30 min.
Remove and cool for 15 minutes.
Cut into 1″ slices and arrange on baking sheet. Bake 8 minutes, turn over and bake an additional 8 minutes. Cool completely.
