Lemon Cream Cheese Pressed Cookies
1 C. butter
1 pkg. 3 oz. cream cheese
1 C. sugar
1 egg, beaten
1 T. lemon juice
1 t. very finely grated lemon rind
2 1/2 C. flour
1 t. baking powder
Blend butter and cream cheese. Add sugar, and cream thoroughly. Add egg, lemon juice, and rind, and blend well. Add dry ingredients and mix thoroughly. Chill if necessary.
Heat oven to 375 degrees. Force through cookie press onto cold, ungreased cookie sheets.
Bake 8 – 10 min.
