Raisin Oatmeal Cookies
1 3/4 cups flour
3/4 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon salt
8 1/2 tablespoons unsalted butter, room temperature
1/3 cup + 2 tbl. light brown sugar
7 tablespoons sugar
1 tablespoon + 1 tsp molasses
2 1/4 teaspoons water
1/2 teaspoon vanilla
1 large egg
2 cups + 1 tbl. rolled oats
1/2 cup shredded coconut meat
1/2 cup + 2 tbl. golden raisins
Preheat oven to 375ºF. Lightly grease baking sheets.
Sift flour, baking soda, cinnamon and salt together. Cream butter, sugars, molasses, water and vanilla on medium speed until light and fluffy.
Add egg and mix on medium low speed to incorporate.
Add flour mixture and combine well. Add oats and mix well to blend, then stir in coconut and raisins.
Drop dough by heaping tablespoons about 2″ apart on cookie sheets.
Bake for 12-14 minutes, cool on baking sheet.
Store in airtight container, can be frozen up to 2 weeks.
Makes 20 cookies.
