Black Bean Brownies AKA Secret Ingredient Brownies

A couple of weeks ago I needed to make a dessert to take to a friend at work. Her friends at work were on a protein diet and I needed to come up with a protein dessert. This recipe for black bean brownies has been around for forever it seems so I decided it would have to do. I had my reservations, I mean really black beans in brownies? I proceeded as the recipe said and pureed the black beans in the blender and then mixed all the rest in it also. I used a really good cocoa from Penzey’s that I love. I almost used splenda in this recipe but just wasn’t sure if it would mess the brownies up or not so went with real sugar. Next time I will use splenda. These brownies rose up in the oven and then upon removing them from the oven they abruptly fell so sugar won’t be missed was my conclusion and one more step toward making these a little healthier. I even toyed with the idea of applesauce for part of the oil and I will be trying that also next time so a revised recipe will be coming soon.

This just might be the moistest brownie you will ever eat. Is it a real brownie? Not really, but it is tasty and has a brownie texture. The girls I took them too loved them!

Secret Ingredient Brownies

Cook Time: 20 minutes

Total Time: 35 minutes

Secret Ingredient Brownies are made with a special ingredient that no one will ever guess. Try our black bean brownie recipe.

Ingredients

  • 3/4 cup cooked black beans
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/4 cup unsweetened cocoa powder
  • 2/3 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup mini chocolate chips, divided
  • 1/3 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup confectioners' sugar, for dusting

Instructions

  1. Preheat the oven to 350 degrees. Spray a 8 x 8 pan with cooking spray. Set aside.
  2. Rinse the black beans well and drain. Place the black beans in a blender. Process until they are smooth. Add the oil and blend a little more. Add the eggs, cocoa, sugar and vanilla. Blend the dry ingredients together. Add to the blender and process on medium high until the mixture is incorporated. Stir in half of the chocolate chips.
  3. Pour into the prepared pan. Sprinkle remaining chocolate chips on top.
  4. Bake for about 20 minutes, mixture will be puffy and look a little shiny still in the center. Cool for at least 15 minutes. (the brownies will puff up while baking and fall as they cool) Cut into squares. Sprinkle with the confectionary sugar before serving.
  5. I cut these into 1 inch squares for serving.

    I love the idea of these, Mary Ellen, but I’ve never had the guts to try them- I was so afraid I’d be disappointed! lol
    I pinned these.

      LOL, I know Jamie, I agree. If I didn’t have to come up with a protein dessert I am not sure I would of tried them either. They weren’t bad. I would make them again.
