Grilled Portobello Mushroom Sandwich

2 golf ball-size balls of fresh mozzarella cheese

4 t. olive oil

2 T. dried OR 4 T. fresh basil leaves

1 T. chopped fresh chives

2 T. balsamic vinegar

2 portobello mushrooms, sliced into halves horizontally

1 large red pepper, cut into fourths vertically

4 large sesame seed buns

Optional for serving: Alfalfa sprouts, onion or other vegetables

In blender container, put cheese, oil, basil, chives and vinegar. Blend until smooth. Set aside.

Grill mushrooms about 3 minutes per side until tender.

Grill peppers (don’t peel) until tender, about 5 minutes per side. Skin will be wrinkled and lightly brown.

Lightly toast buns on grill.

Spread mozzarella mixture evenly on bottom of each bun. Cover with mushroom slice and red pepper. Add sprouts, onion or other desired vegetables. Serve immediately.

Yield: 4 servings
