Savory Sirloin Sandwich
3/4 to 1 lb. boneless sirloin steak
1 t. cumin
1/2 t. salt
1/2 t. freshly ground pepper
2 T. olive oil
8 slices good quality bread
4 C. fresh spinach, washed
Combine cumin, salt and pepper. Rub the steak with this mixture, evenly on both sides.
Heat olive oil in a skillet until it is hot. Add steak and cook 5 minutes on each side or until desired doneness.
Spread mayonnaise on both sides of the bread. Divide the spinach among 4 slices of the bread. Slice the steak across the grain in thin slices and divide among the sandwiches. Top with the tomato slices. Salt and pepper to taste. Cover with remaining bread slices and cut in half.
