Peanut Butter Pie

Prep Time: 30 minutes

Cook Time: 40 minutes

Total Time: 1 hour, 10 minutes

Yield: Serves 8

Creamy peanut butter pudding with peanut butter crumbles, airy, light meringue makes up this delicious peanut butter pie.

Ingredients

  • 1 cup confectioner's sugar
  • 1 cup peanut butter (divided use)
  • 3 cups milk
  • 1 cup sugar
  • dash salt
  • 1 1/2 teaspoons vanilla
  • 4 eggs, separated
  • 6 tablespoons cornstarch
  • 1/3 cup sugar (for meringue)
  • Lard Pie Crust, link above

Instructions

  1. In a small bowl, add the confectioner's sugar and 1/2 cup of the peanut butter. Cut sugar into peanut butter with a fork until mixture is crumbly. Place half of mixture in bottom of baked pie shell, reserve remainder for top.
  2. In large sauce pan, add the egg yolks, milk, 2/3 cup sugar, remaining peanut butter, vanilla, salt, and cornstarch. Cook over medium low heat until thick, stirring constantly (I used a whisk). Pour over peanut butter crumbles in the pie crust.
  3. Beat egg whites until foamy, add sugar. Continue beating until soft peaks form. Spread over top of pie, being careful to seal at edges. Sprinkle remainder of peanut butter crumbles over top of pie.
  4. Bake at 325 for thirty minutes.
  5. Refrigerate for several hours before serving.

Notes

Total time does not include cooling time. Cool and refrigerate for 4 hours.

    I am so going to pin this! I always bake my pie crusts with lard–and they are so easy. A master chef told me to do it, and not to work with it too much (to leave even big chunks of lard,) and it has worked well!     I just can’t get enough peanut butter Mary Ellen! This pie looks fantastic. My grandmother had pies for Sunday dinner each week. She made the crust with lard and there is nothing like it. Truly delicious and tender. Thanks for the walk down memory lane. I sure miss that pie crust. Maybe I’ll try to make one for my family.

    I love peanut butter pie. I used to work at Marie Callender’s and this pie had to be special ordered. Quite possibly the best pie in the world.

      I love this pie, I first had it at a Big Bob Gibson’s and it was amazing. They only made it one weekend a month so I went on a quest to make my own. This is the final version.

    This looks divine! I’m not a large pie fan either as is evident by the lack of them on my blog, I think this one would be a pie I couldn’t resist though. I love all things peanut butter and I love how different this is!

      I don’t have a lot of pie recipes either. This is a really good peanut butter filling but those crumbles are the surprise when you eat this. They give a burst of peanut butter flavor.
