3 oz. pkg. lemon-flavored gelatin
1 c. boiling water
1 c. 7-up
1 large banana, sliced
1 c. miniature marshmallows
8 oz. can crushed pineapple, drained (reserve juice)
1 Tbl. butter or margarine
1 Tbl. flour
1 egg, beaten
1/4 c. sugar
1/2 c. reserved pineapple juice
1/2 pint whipping cream, whipped
Shredded cheese, if desired.
In large bowl, dissolve gelatin in boiling water. Stir in 7-up, banana, marshmallows and pineapple. Pour into serving dish. Refrigerate until firm.
In medium saucepan, over low heat, melt butter. Add flour, stir to make a paste. Add egg, sugar and pineapple juice. Heat to boiling; cook and stir 1 min. Cool slightly.
Fold in whipped cream, pour over chilled salad.
Sprinkle with cheese. Return to refrigerator.
