Pizza Rice Salad
1 cup of long grain rice
2 cups of water
1 cup shredded Mozzarella cheese
1 cup sliced pepperoni, cut into bite sized pieces
1 large tomato, diced
1 large green pepper, diced
8 black olives, diced
1 cup of Italian salad dressing
Cook rice, fluff with fork when done.
In a large bowl mix rice with all the ingredients, using only 1/2 of the Italian dressing.
Mix well and chill.
Before serving add in more dressing if desired.
