Wisconsin Cheese Chowder
4 ounces kielbasa, coarsely chopped
2 carrots, thinly sliced
1 large onion, thinly sliced
1 red or green pepper, chopped
1/3 cup flour
1/8 teaspoon dry mustard
5 cups chicken broth
2 cups shredded sharp cheddar cheese
Cook kielbasa, carrots, onion and pepper in medium saucepan until vegetables begin to soften. Stir in flour and mustard.
Gradually pour broth into saucepan, stirring until smooth. Simmer 10 minutes.
Add cheese, 1/3 cup at a time, stirring constantly, while simmering over low heat. Do not allow chowder to boil.
