Heavenly Blueberry Cake

2 3/4 cups cake flour
4 teaspoons baking powder
1 teaspoon salt
1 1/2 cups sugar
3/4 cup shortening
1 cup milk
1 teaspoon vanilla
4 egg whites
1 1/2 cups blueberries

Beat egg whites until foamy.

Gradually add 1/2 cup sugar; beat until soft peaks form.

Sift together flour, baking powder and salt.

Cream shortening; add the rest of the sugar and cream until fluffy.

Add flour mixture alternately with the milk, beating after each addition.

Mix in vanilla, then beat the egg whites into the batter.

Stir in 1-1/2 cups blueberries.

Pour into 2 (8inch) layer pans that have been greased and floured.

Bake at 350ºF in preheated oven for about 35 minutes or when inserted toothpick comes out clean.
