Frijoles de Olla (Beans cooked in a pot)
1 lb. (2 to 3 cups) pinto beans
12 C. hot water
6 slices bacon, chopped, or 1 ham bone (optional)
1 t. salt
Rinse beans and check for small stones. Put beans in a large pot and cover with hot water. Add onion and bacon or ham bone and bring to a boil. As soon as the beans come to a boil, lower heat and simmer, covered 2 to 3 hours, until they are just tender but not soft. Do not stir.
Add salt and simmer another 30 minutes.
Recipe makes 10 servings.
