Chicken Parmesan Express
1 (12 oz) pkg spaghetti, uncooked
4 skinned and boned chicken breast halves
1 large egg, lightly beaten
1/2 cup Italian seasoned bread crumbs
3 tbsp butter or margarine, melted
1 (14 oz) jar spaghetti sauce
1/2 cup shredded mozzarella
Parmesan cheese for sprinkling
1/4 cup chopped fresh parsley or basil sprigs
Cook pasta according to package directions. Drain and keep warm.
Place the chicken between two sheets of heavy-duty plastic wrap, and flatten to about 1/4 inch thickness, using a meat mallet or rolling pin.
Dip chicken in egg, and coat with bread crumbs. Melt butter in large skillet over medium heat. Add chicken and cook 8 minutes on each side or until chicken is fork tender and no pink remains. Remove chicken and drain on paper towels; keep warm.
Cook spaghetti sauce in a medium saucepan over medium-high heat until thoroughly heated.
Place the spaghetti on a serving plate, top with chicken breast.
Pour sauce over chicken and sprinkle with cheese.
Garnish with parsley or basil.
You can use any type pasta for this dish, depending on your preference. any of these will do – bow ties, fettuccine, penne.
