Very Ritzy Italian Chicken
3 whole chicken breasts – split, skinned, and boned
2 eggs – slightly beaten
1 cup seasoned bread crumbs
3 tablespoons olive oil
6 slices Mozzarella cheese
1 pint heavy cream
1 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Salt – to taste
Pepper – to taste
Preheat oven to 350° F.
Dip the chicken breasts in the eggs. Place the bread crumbs in a shallow bowl; coat the chicken with the bread crumbs.
In a large skillet, heat the oil until moderately hot. Place the chicken in the frying pan and brown lightly on both sides. Remove from pan and place in a baking dish.
Top each breast with a slice of Mozzarella cheese.
In a saucepan, mix together the heavy cream, Parmesan cheese, parsley, salt, and pepper. Cook until mixture is hot and has thickened.
Pour over chicken and bake for 25 minutes or until cheese is melted and light golden.
